Yummy!

No adventures today. Laura had a half day of yoga but the rest of the day was dedicated to preparation for the the upcoming final week of training. So we stayed home, the girls swam in the pool and we put a little extra time and effort into COOKING!

First, April wanted to make the "energy balls" that the girls and Tita have been making for years. We had all the ingredients (oats, peanut butter, honey...) AND we had a fresh coconut which we diced and toasted in the oven. What we did not have was chocolate chips. But we did have the fresh, pure roasted and ground cacao we bought from the local woman a little over a week ago. So we melted it, added milk, coconut oil, honey and slowly stirred until we had creamy, delicious chocolate! We then put the molten chocolate into a zip lock bag, cut a tiny corner off (April's idea) and used it as a piping bag to pipe out about 200 chocolate chips onto a cutting board covered in wax paper.


We had a lot of extra chocolate after our cutting board was full so we piped out a bunch of chocolate bars too, popped it all in the freezer and thirty minutes later April was adding newly-minted Costa Rican chocolate chips to her energy ball batter.


Then I moved on to dinner. Coconut rice with red pepper, garlic, mandarina juice and cilantro, mango salsa, guacamole, broccoli and pan-fried red snapper. Every ingredient was fresh and local. The result was a crowd pleaser!
